Short answer: We planned the trip in secret for quite some time and needed a code name.
Long answer: Back when we
were getting married and Karen's mother wanted to talk about the wedding dress without Garvin knowing what they were talking
about she referred to it as the "The Tortilla." Well, the trip was bigger than the dress, so it became "The Enchilada."
